🥬 Ingredients:
Here’s everything you need to make this delicious and nutritious salad:

🥗 Salad:
White quinoa – 1 cup.
Water – 1.5 cups.
Roughly chopped spring mix – 2 cups.
Chopped tomatoes – 1 cup.
Chopped cucumbers – 1 cup.
Chopped mushrooms – 1.5 cups.
Diced carrots – ½ cup.
Corn – ½ cup.
Chopped pickles – ½ cup.
Grilled chicken breast, Chopped – 1 cup.
Spices (to taste): black pepper, garlic powder, salt.

Egg – 1.
Lime – 1.
Greek yogurt – ½ cup.
Olive oil – 1 tablespoon.
Dried herbs (to taste): oregano, dill, mint.
Spices (to taste): thyme, black pepper, garlic powder, salt.

🧀 Garnish:
Chickpeas – ½ cup.
Parmesan cheese – 1 tablespoon.
Pumpkin seeds – 1 tablespoon.

1. Cook the quinoa until the water is fully absorbed and let it cool. 📽️ 00:48
2. Cook the chickpeas, season them, and air fry at 🔥 375°F (190°C) for ⏱️ 12 to 15 minutes until crispy and golden. 📽️ 00:59
3. Boil the egg for 10 minutes. 📽️ 1:11
4. Chop all the vegetables and greens. 📽️ 1:13
5. Add all salad ingredients to a large bowl.
6. Blend the dressing ingredients until smooth, then mix in the dried herbs. 📽️ 1:33
7. Pour the dressing over the salad and gently combine everything.
