Recently I have not been a fan of many store bought dressings because of all the added unhealthy ingredients! Therefore it is time to make homemade dressings so that I can enjoy my salads without having to worry about unnecessary added ingredients.

This is a recipe I put together for a healthy coconut curry salad dressing. This can also be used as a sauce for savory meals such as chicken, shrimp, salmon, or tofu. It has healthy ingredients that are better for you than what you see on many salad dressing labels in the store. It is a convenient recipe to make in a food processor and the amount of sriracha you add is based on personal spice preference.

Here is what you will need:

-COCONUT YOGURT (1 CUP)…I used So Delicious Dairy Free Coconut Yogurt
-GARLIC CLOVES (1-2 cloves)
-FRESH SQUEEZED LIME JUICE (1 Lime)
-SALT/SUGAR FREE PEANUT BUTTER (1 oz)
-COCONUT MILK-HOMEMADE/STORE BOUGHT UNSWEETENED (1/2 cup)
-CURRY POWDER SALT FREE (1 TSP)
-SALT (just a pinch)
-*optional* PB2 Powder – (1 tbs)…or add more peanut butter or peanuts to make it more peanut buttery

Enjoy for 5-7 days
