1. Spring Rolls (0:25)
rice paper or big lettuce cups
1/2 bell pepper
1 carrot
1 cucumber
1/2 jalapeño
1/2 avocado
lemon slices
lettuce
cilantro
spinach
Dip the rice paper in warm water until it softens. Place wet rice paper on a wet surface and start laying out your veggies. Start with the lettuce and stack up. Pull the veggies to the end of the paper and roll like a burrito. Sweet Chili Sauce is from Trader Joes but most grocery stores sell it. You can also make a peanut sauce: mix a tbsp of peanut butter with 1 tbsp soy sauce and 1 tbsp honey
2. Tuna Salad Boats (3:18)
1 can of tuna (you can also use: shredded chicken, shrimp, crumbed tofu, or shredded carrots)
1tbsp of mayo or yogurt
lemon/lime juice
1 tbsp of buffalo sauce
1 tbsp of mustard
tbsp jalopenos
salt, pepper, garlic powder, paprika
cilantro
green onions
2 bell peppers
Mix all the ingredients together. Slice up your bell pepper inside boats and fill them with the tuna mixture. Top with crushed red pepper or hot sauce and enjoy!
3. Rice Cakes with avocado (5:35)
2 White cheddar rice cakes
1/2 avo
lemon/lime juice
1 slice of tomato
1/2 cucumber
fruit slices
nuts
Smash up the avocado and add lemon, lime, and seasoning of your choice. Spread onto the rice cakes and top it with a slice of tomatoe on one and cucumbers on the other. Serve with a side of fruit (watermelon) and nuts ( almonds and dark chocolate almonds.)
4. Egg, mushroom, spinach muffins (8:07)
2 eggs
1/2 cup of egg whites ( or just use a 3rd egg)
1tbsp of milk
1/2 tsp of baking powder
seasoning
1 cup mushrooms
1 cup spinach
1/4 cup onions
2 cloves garlic
parmesan cheese
cheddar cheese
fruit
Recipe for a 12 mini muffin tray: adjust for bigger sizes
Preheat the oven to 350 degrees F. Start but chopping up the onions, mushrooms and spinach into small pieces. Sautee with olive oil until cooked. Add seasonings and 2 cloves of garlic. Add the mixture to the muffin trays. Make sure to spray with non stick before or use muffin cups. Then pour in the egg mixture. Top with cheese. Heat the oven to 350 degrees and cook for 10-12 minutes (more depending on how big the muffins are.) serve with fruit (strawberries).
5. Banana Oatmeal Cookies (10:38)
1 ripe banana
1 cup of oats
1 dash of cinnamon
1 tsp vanilla extract
1 tbsp of almond milk
1/4 cup chocolate chips
Preheat the oven to 350 degrees F. Mash the bananas until its mushy then add the other ingredients. Roll dough into balls and flatten into a cookie shape. Place onto a non stick tray. Bake for 10 minutes.
