4 cups oats
1 1/2 cups cottage cheese (I used Knudsen’s Lowfat)
2 eggs
1 Tbls baking powder
1 tsp salt

Blend together and form 6-8 (mine made 7) round breads.

(they kind of resemble a large unbaked cookie)

Bake in 400 degree oven for 15-20 minutes or until golden brown.

Let cool and carefully slice in half.

Topping; I used a 1/2 avocado, cottage cheese, tomato, red onion and spices. You can use deli meats, cheeses or whatever you enjoy on bread!
