Chickpeas are combined with juicy tomatoes , crisp cucumber , refreshing coriander and all tossed in a home made lemon vinaigrette. It is easy to make and perfect for lunch as chickpeas are protein packed and leave you full for hours.You can get all the flavours in one delicious bite.
Ingredients
Boiled chickpeas- 1/2 cup
Cucumber -1 diced
Tomato – 1 diced
Capsicum- 1/2 diced ( any colour)
Onion -1 diced
A few stalks of fresh coriander- chopped
Lemon vinaigrette -Salad dressing
Fresh lemon juice – 2 Tbsp
Olive oil – 1 Tbsp
Vinegar -1 Tbsp ( prefer Apple cider vinegar)
Honey – 1 Tbsp
Salt & pepper
Method
Mix all the ingredients with salad dressing and gently toss to combine.
Tips
* To ensure freshness add the salad dressing a few minutes before serving.
* You can substitute your favourite vegetables.
