Here’s how to make a healthy breakfast Hash for dinner with Chorizo, kale, potatoes, onions, and eggs. It’s sort of like a pan fried hash brown casserole. Recipe Below
INGREDIENTS (4 Servings)
2 Tablespoons of Olive Oil
1 Cup of Onion (Chopped)
2 Cups of par boiled potatoes [Russet or Yukon] (Chopped)
1 Cup of Bell Pepper (Chopped)
2 Chorizo Sausages (Fried and Chopped)
1 Tablespoon of Garlic (Minced)
2 Cups of Kale (Chopped)
4 Eggs
2 Tablespoons of Cheddar
1/2 Avocado for garnish (Optional)
1 Teaspoon Paprika
1/2 Teaspoon Cumin
Salt and Pepper to taste
DIRECTIONS
Fry Onions with Olive Oil in large pan on medium high heat. Salt to Taste. Add parboiled potatoes and fry, being careful not to mix to much to develop a crust. Add garlic, and spices. Cook for 15 – 20 more minutes.
In separate pan, fry Chorizo, till browned on the outside. Remove chorizo from the pan and chop. Add chopped bell peppers and chopped chorizo to this pan, and fry for a couple minutes till Chorizo is cooked and crispy. Add this to main pot with potatoes.
With the empty pan, add a dash of oil, and fry the kale till it’s a bright vibrant green. Salt to taste. Add to main pan.
Add 4 eggs to pan and mix through. Salt and pepper to taste. Grate cheese into pan and garnish (optional) with avocado, and green onion. Enjoy.
