PREPARATIONS:
GREEN GRAM / GREEN MUNG SPROUTS :
CLEAN THE GREEN GRAM AND SOAK OVERNIGHT IN A WATER.
DRAIN WATER COMPLETELY ON NEXT DAY AND KEEP GREEN GRAM IN A STRAINER OR COLANDER.AND COVER WITH LID. AND KEEP IT IN A WARM PLACE.
GREEN GRAM WILL GET SPROUTS IN NEXT 8 TO 10 HOURS.
NOW A DAYS GREEN SPROUTED GRAMS ARE EASILY AVAILABLE IN MARKETS.
INGREDIENTS:
100 GMS. SPROUTED GREEN GRAMS,
FRESH CORIANDER,( MINT LEAVES, SPINACH)
3 TO 4 TBSP. SEMOLINA,
1/2 INCH GINGER,
5 GARLIC CLOVES,
5 TO 6 GREEN CHILLIES,
15 CURRY LEAVES,
1 TSP. CUMIN SEEDS,
1 TSP. FENNEL SEEDS,
1 TBSP. CORIANDER SEED POWDER,
1 TBSP. GRAM FLOUR / BESAN,
SALT,
2 TBSP. LEMON JUICE,
GRATED CARROT ( RED PUMPKIN, BOTTLE GOURD, BEET ROOT),
WATER.
RECIPE:
GRIND GREEN GRAMS, CORIANDER LEAVES, GINGER, GARLIC CLOVES, GREEN CHILLIES, CURRY LEAVES, CUMIN SEEDS, FENNEL SEEDS TOGETHER IN A GRINDER. ADD 3 TO 4 TBSP. OF WATER WHILE GRINDING IF NEEDED.
TAKE GREEN MUNG PASTE IN A MIXING BOWL, ADD SEMOLINA / SOOJI, LEMON JUICE, CORIANDER SEED POWDER, GRAM FLOUR, SALT & GRATETD CARROTS AND MIX IT ALL TOGETHER.
LET THE BATTER REST FOR 10 MIM. WITH COVERED LID.BATTER CONSISTENCY SHOULD BE LIKE IDLY BATTER.( IF BATTER IS THICK ADD WATER AND IT LITTLE LIQUID THEN ADD MORE SEMOLINA TO IT.)
AFTER 10 MIN. GREASE APPE PAN WITH LITTLE OIL. ADD APPE BATTER TO IT AND SPRINKLE SOME OIL ON THE TOP. AND COVER WITH LID AND ROAST APPE ON LOW FLAME.
AFTER 2 TO 3 MIN. CHECK THAT ONE SIDE IS ROASTED GOLDEN BROWN AND THEN TURN AND AGAIN KEEP IT COVERED ON LOW FLAME. AND MAKE SURE THAT ALL SIDES OF APPE ARE GOLDEN BROWN AND CRISPY.
HEALTHY GREEN APPE ARE READY TO SERVE. SERVE PIPING HOT WITH MINT CHUTNEY, KETCHUP OR CURD.
NOTES:
YOU CAN MAKE DOSA OR UTTAPA OF SAME BATTER.
FOR DOSA: ADD LITTLE WATER TO THE BATTER AND MAKE DOSA ON A DOSA TAWA. ROAST THEM CRISPY.
FOR UTTAPPA: ADD SOME WATER AND MAKE UTTAPA IN A PAN , ADD ONION, TOMATOES, GREENCHILLIES, CORIANDER ( YOU CAN ADD YOUR FAVOURITE VEGETABLES HERE.) AND ROAST UTTAPA FROM BOTH THE SIDES AND ADD SOME PURE GHEE TO IT.
2. NO NEED TO FERMENT THE BATTER. YOU CAN ADD CURD INSTAED OF LEMON JUICE.
