BHaving scoured the internet and having tried several recipes, we have finally found and perfected one that works without the high calorie count.
Many recipes call for sugar, flour & butter – these alone will cause your banana bread to be a waist-busting 1500+ calories! Our loaf comes in at just under 200 calories per slice!!
Ingredients:
75g coconut oil (melted in the microwave for 10 or so seconds)
220g of spelt flour
168g Agave (a sugar alternative)
56mls almond milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 teaspoon baking soda (NOT POWDER)
1/2 teaspoon of salt
225g ripe bananas (about 3 large bananas – mashed up)
2 medium eggs
Method:
Pre-heat the oven to 180.
Fold in the flour to the mashed bananas.
Fold in the milk.
Add the melted coconut oil.
Add the agave.
Add the cinnamon & mix well.
Add the salt, baking powder & vanilla extract.
Mix in the eggs and mix well until the mixture is smooth’ish.
Pop into a greased or silicone loaf tray.
Bake in the oven for 20 minutes or until golden & cooked through.
