Packed with antioxidants & heart friendly plums & beets, this Salad is an absolute Must-Try, especially with those juicy Red Plums in season! So simple to put together, yet so very heathy!

This recipe calls for one-of-my-fave Herb & Garlic dressing, which pairs beautifully with- Plums & Beets- the heroes of our salad! And not to forget the creamy homemade Ricotta!

If you aren’t able to make/buy Ricotta, fresh Paneer would be the best substitute!

Here’s the INGREDIENT LIST:
7-8 medium sized Red Plums
4 medium sized Red Beets

DRESSING:
2 ½ tbsp. olive oil
1 tbsp lemon juice
1 ½ tbsp. maple syrup/honey/sweetener of choice
3 tbsp- fresh herbs (I used Basil and Parsley) (Coriander and Mint will work great too!)
Salt- to taste

HOMEMADE RICOTTA or use Fresh Paneer (Cottage Cheese) :
This recipe is that of ‘Bigger Bolder Baking’ on Youtube. It was my first experience making homemade Ricotta, and Gemma’s Recipe worked really well! I highly recommend to give it a try.

2 cups full fat milk
¼ cup or 4 tbsp, cooking cream
1 tbsp vinegar or lemon juice (don’t use lime)
1/2 tsp salt
