I have had so many people ask me to create some videos showing some quick and simple snack ideas, I am creating videos every week with savory and some sneaky treats in between so stay tuned. 😉
Today I am going to share with you one of my favorite but super simple and cost-effective gluten / dairy-free snack…
Wait for it…Thats right! Sweet Potato Toast ;D
SWEET POTATO BENEFITS:
– Sweet potatoes are an excellent source of beta carotene, vitamin C, and potassium. They are also a decent source of many other vitamins and minerals. – GREAT immune booster!
– Sweet potatoes are rich in many plant compounds, such as beta carotene, chlorogenic acid, and anthocyanins.
– Sweet potatoes are likely healthier than regular potatoes. They have a lower GI, more fiber, and large amounts of beta carotene.
– Sweet potatoes may have a variety of benefits, including improved blood sugar regulation and reduced oxidative damage and it also has anti inflammatory benefits.
**Overall, sweet potatoes are nutritious, cheap, and easy to incorporate into your diet.
These can be made in the oven or a toaster to be enjoyed as a savory snack OR a sweet treat 😉
TIPS for Making Sweet Potato Toast
Choose the largest sweet potatoes you can find at the store. You’ll want to find the ones that are relatively tube-shaped so they’re easier to slice. OK SO…I could not find any large sweet potatoes so I had to settle for some tiny ones, and I clearly had a fight with the sweet potatoes whilst cutting them, haha BUT, I do not create these videos to bring you PERFECTION, I create these videos to bring you IDEAS ;P
Boil the sweet potatoes for 5 minutes before toasting. This will help it be more tender with less toasting time, but it’s not necessary, However, as you can see by my fine slicing skills it does help haha
Using a sharp knife, slice the sweet potato lengthwise down the middle. Make 4-5 thin slices about 1/4″-1/3″ thick from the middle of the sweet potato.
Spray sweet potato slices with cooking spray or Coconut oil and season with salt and pepper (Optional)
TOASTER INSTRUCTIONS:
Insert slices into the toaster (similar to bread) and toast the slices on high.
After the sweet potatoes pop up from the toaster, check to see if they are fork-tender, and toast longer if desired. Depending on your toaster, you may also want to turn down the toaster setting to Medium.
Remove the sweet potatoes from the toaster, and cool on a wire rack before adding toppings.
OVEN INSTRUCTIONS:
Preheat oven to 350℉. Place a wire rack on a large rimmed baking sheet.
Bake for 15-20 minutes, until potatoes are fork-tender, but not fully cooked or soft.
Remove the sweet potatoes from the oven, and cool on a wire rack before adding toppings.
OPTIONAL TOPPINGS:
Savory – Cheese (Vegan), humous, tomatoes, cucumber, olives, peppers, radishes, nuts, seeds, spring onions, avocado
Sweet – Almond / Cashew butter (If you have no allergies), chocolate spread (Vegan), jam, banana, berries
