Chipotle inspired dinner
Here is an easy, quick and most importantly healthy lunch or dinner idea…
You can make it a vegetarian dish by just omitting the chicken .
Step 1- white rice
– 1 1/2 cup water: 1 cup white rice
– Add salt , oil & Simmer for 8-10 minutes
– Finish up with lemon juice and chopped cilantro
Step 2- Chipotle chicken
– boil strips of white chicken meat with pinch of salt, black pepper & bay leaves
– Sauté boiled shredded chicken with onion, garlic , canola oil , of salt , black pepper and Chipotle pepper
Step 3- chili beans
– drain and rinse canned low sodium Goya red kidney beans
– Sauté onion, garlic, chili pepper, tomato sauce and beans
Step 4- Guacamole
– Cut 3 ripe avocados in cubes
– Season with salt , black pepper & minced garlic
– Add lemon juice and chopped cilantro

* You can top it with different vegetables like diced tomatoes and shredded lettuce.
* Add low fat sour cream and shredded cheese for dairy source
