Carrot Chutney Recipe:

Carrot (grated) – 3 Cups
Onion – 3 nos
Tomato (ripe) – 2 nos
Dried Red Chilli – 6 nos
Garlic – 10 cloves
Split Urad Dal – 2 tsp
Gingelly Oil – ¼ Cup + 2 tbsp
Salt – 1 ½ tsp
Mustard Seeds – 1 tsp
Coriander Leaves – 1 tsp
Curry Leaves – 10 nos
Water – ½ cup

Cooking Instructions:

1. Add ¼ cup of gingelly oil to a pan. When the oil heats up, add dried red chillies, onion, tomato and garlic.

2. Add salt and saute it for 10 mins on high flame.

3. Once it cools down, add them to a mixer grinder, ½ cup of water and coarse grind it.

4. Add the ground chutney to a serving dish.

5. Heat a pan, add 2 tbsp of gingelly oil. Add the mustard seeds. Once it splutters, add the urad dal. When it turns golden brown, add the curry leaves. Add this tempering to the Chutney.

6. Add finely chopped coriander leaves and mix.
