☆ SPEEDY TOMATO PASTA ☆
2 servings pasta (I used chickpea)
2 garlic cloves, peeled and roughly chopped
1 cup cherry tomatoes, roughly chopped
2 cups button mushrooms, sliced
Handful of fresh kale or spinach
2 tsp tomato puree
1 tsp paprika
½ tsp cayenne pepper
Drizzle of olive oil
Pinch of chili flakes
Juice of half a lemon
Pinch of sea salt
Pinch of pepper

☆ CREAMY COCONUT MUSHROOM & QUINOA SOUP ☆
2 tablespoons olive oil
4 cups mushrooms
1 shallot diced
4 – 5 cloves garlic minced
2 tbsp quinoa flour
2 cups full-fat coconut milk
3 cups chicken broth (or vegetable)
¼ cup sesame oil
1/3 cup white quinoa or rainbow quinoa
Juice of 1 lemon
2 tbsp adobo seasoning
1 tbsp garlic powder
1 tbsp onion powder
Salt & pepper to taste
Chili flakes to garnish (optional)
Parsley to garnish (optional)

☆ QUINOA BREAKFAST TACOS WITH KALE + BUTTERNUT SQUASH ☆
1½ cups cooked quinoa
¼ cup finely chopped fresh cilantro
1 tbsp freshly squeezed lime juice
2 tbsp freshly squeezed lime juice
¼ tsp sea salt
½ tsp garlic powder
½ tsp onion powder
4 gluten-free tortillas
1 cup butternut squash
1 cup kale
1 cup shredded red cabbage
4 pieces of cooked turkey bacon
1 large ripe avocado pitted, peeled, and thinly sliced
4 scallions thinly sliced
Sea salt and freshly ground black pepper
