This is a simple and very light salad with baked Butternut Squash. Try and you will love the taste of this salad! Butternut Squash Salad is perfectly decorates your dinner for Halloween!
INGREDIENTS
4 ounces baby arugula, washed and spun dry
1 butternut squash, peeled and diced
1/2 cup walnuts halves
2 tablespoons honey
1/2 cup crumbled Feta cheese
1 tablespoon Pumpkin Seed Oil
Salt and pepper, to taste

PREPARATION
1. Preheat oven to 365°F/180°С.
2. Butternut squash peel and cut into small cubes.
3. Place the butternut squash on an aluminum foil. Add salt and pepper.
4. Bake the squash for about 15 to 20 minutes.
5. While the squash is baking, combine the honey and walnuts in the pan and fry for 8-10 minutes.
6. Place the arugula in a large salad bowl and add the baked squash mixture, the walnuts, and the crumbled Feta cheese. Add the Pumpkin Seed Oil. Sprinkle with salt and pepper and serve immediately. Enjoy!
