SHREDDED HOISIN LETTUCE CUPS – FRESH SALAD – TOFU WRAP – AVOCADO & YOGURT DRESSING

Following ingredients as per video:

Shredded Hoisin Lettuce Cups
-100g Shredded Soy Chicken
-50g Mushrooms (I used wild Mushrooms for extra flavour)
– 1 Whole Dried Chilli
– 1 tsp Freshly Grated Ginger
– ½ tsp Minced Garlic
Salt & Pepper

-Hoisin Sauce:
1 tsp Arrowroot Powder/ Tapioca Starch/ Corn Flour
1 tsp Peanut Butter
2 tsp Soy Sauce (I used low salt)
1 tsp Vinegar (I used Cider Vinegar)
1 tbsp Pomegranate Molasses
¼ tsp Garlic Powder
1 tsp Water (whilst cooking to thin slightly)

To Finish:
-Lettuce
-Cucumber
-Spring Onion
-Coriander
-Pomegranate Seeds

Green Salad, Fresh Tofu and Avocado Dressing
-125g Fresh Cubed Tofu – Rubbed with Salt
-100g Boiled and cubed Potatoes
-¼ cup Bulgar Wheat cooked in ½ cup water – cooked for 10-15 minutes on a medium heat
-Lettuce
-Spinach
-Spring onion
-Cucumber
-Tomatoes

-Avocado and Yogurt Dressing – (This will make 2 portions)
1 Large Avocado
4 Heaped tbsp Vegan Yogurt
2 tbsp Oat Milk
1 tbsp Lemon Juice
Zest of half a Lemon
Salt and Pepper

Final Elements if you want to garnish in style:
-Tangerine
-Coriander
-pomegranate seeds

Spiced Tofu Wrap
-150-200g Tofu
½ tsp Smoked Paprika
½ tsp Ground Turmeric
½ tsp Ground cumin
½ tsp Ground coriander
Salt and Pepper
1 tsp Minced Garlic
-¼ Red Onion
-Raw Spinach
-Tangerine
-Avocado and Yogurt Dressing
-Toasted Pine Nuts
-Lemon Zest
-Served on a Tortilla
