Are you sick of fast food and looking for easy healthy lunch ideas you can make at home? You’re in luck, my friend! I have three recipes for you that are super simple and easy to throw together on your work from home lunch break! Today we’re covering a quick protein packed green smoothie (get over the color, you’ll love it!) – a quick chicken berry salad (any leftover chicken will do) and a chicken veggie pita that is packed with veggies. All good stuff. Also – these recipes are so simple, I don’t even need words!

SMOOTHIE INGREDIENTS:
1 c. water
1 tbsp chia seeds
⅔ c. Greek yogurt – plain
1 banana
3 c. spinach
1 c. pineapple
DIRECTIONS:
Add ingredients to your blender in the order listed
Blend until smooth
Enjoy! 💕
NOTES:
A high quality blender makes all the difference on this one – I have a Vitamix
If your banana isn’t ripe you can stir in honey for additional sweetness
If 3 cups of spinach is daunting for you, start with less and work your way up! I think this way is delicious though, as long as your banana is ripe!

SALAD INGREDIENTS:
2-3 c. romaine lettuce or spinach
1 c. chopped cooked chicken
1 c. berries (I used raspberries & blueberries – strawberries & blackberries work well too)
1 tbsp feta cheese
Drizzle of extra virgin olive oil
½ tbsp balsamic vinegar
DIRECTIONS:
Wash and chop your lettuce and add to a large plate
Layer on the rest of the ingredients in order

PITA INGREDIENTS:
1 Greek style pita bread
1 tbsp Marzetti’s Dill Veggie Dip
½-1 c. spinach
½ c. cooked chopped chicken
Cucumber slices
3 cherry tomatoes – halved
3-4 Kalamata olives – chopped
1 tbsp feta cheese
DIRECTIONS:
Heat pita in the microwave for 15 seconds
Spread veggie dip on the pita
Layer on the rest of the ingredients in order
Enjoy! 💕
