Sweet Corn Salad
ingredients (serves 4)
1 cup sweet corn kernels (or
2 ears of corn)
2 medium tomatoes, deseeded, finely chopped
1 medium green capsicum, deseeded, finely chopped
1 medium cucumber, peeled, finely chopped
7-8 black olives, finely chopped
50g iceberg lettuce, shredded into small pieces
1/4 cup fresh mint leaves, torn into small pieces
Juice of 1/2 lemon
1 tbsp olive oil
2-3 sprigs of fresh coriander leaves, finely chopped
Salt and black pepper powder to taste
