Chia Seed Pudding
1 cup non-dairy milk
3 tablespoons chia seeds
sweetener of your choice

mix ingredients together and refrigerate over night

Tuna Salad

1 can of tuna
2 tablespoons fresh dill
juice of half a small lemon
salt and pepper
1/2 tsp garlic powder
2 1/2 tablespoons of mayo
1 tsp dijon
1/2 tablespoon vinegar
1/3 cup diced celery
1/4 cup red onion

Chicken and rice skillet
5 chicken thighes
1 cup brown rice
2 cups chicken broth
1/2 small diced onion
4-5 minced garlic cloves
juice of half lemon
olive oil
Garlic Expressions Vinaigrette
salt and pepper
north mediterranean seasoning blend
garlic powder
onion powder
celery salt
fresh parsley

Marinate chicken for 30 minutes
cook for 6-7 minutes on each side
remove chicken and clean the pan
Sautee garlic and onions
add rice, broth and chicken to the pan
cook on 350 degrees F for 40 minutes (covered)
uncover and cook for an additional 15 minutes or until liquid is dissolved
