Mediterranean Quinoa Salad with Hummus dressing recipe to serve as side dish salad or as take-to-work lunch.
This easy, healthy, nutritious, delicious dish is prepared quickly and is wholesome meal with full of high protein and fiber.
It’s the perfect pasta replacement for gluten-conscious eaters.
Ingredients : Use organic ingredients where possible

1 cup garbanzo (chickpea) beans, rinsed and drained well
1 cup quinoa, rinsed and drained well
2 cups water
5 teaspoon tahini sauce
1 lime, juiced
Salt & Pepper to taste.
1/4 cup extra virgin olive oil
5 sweet peeper or 1 bell pepper, quarter inch chopped
1 beet root, grated
1 carrot, grated
1 cucumber, grated
1 cup corn, boiled
1 cup tomato, quarter inch chopped
Preparation

Pre-requisites :

Soak the Garbanzo (Chickpea) beans overnight.
Quinoa Preparation :

Wash and Rinse the Quinoa 2 to 3 times.
Cook the Quinoa in the Pan with 2 cups of water for 10 to 15 mins or until all the water is absorbed.
Humus Preparation :

Cook the garbanzo (chickpea) beans until it turns soft.
Transfer the garbanzo (Chickpea) beans to the grinder jar and add lemon juice, tahini sauce or sesame seeds, extra virgin olive oil & salt to taste.
Grind the Mixture and humus is ready.
Humus Preparation :

Transfer the humus to any dressing bowl and add rice vinegar, lemon juice, extra virgin olive oil, salt & pepper to taste.
Add some water for running consistency.
Salad Preparation :

Transfer Quinoa to the salad dish and spread evenly.
Add garbanzo (chickpea) beans, diced cucumber, graded beetroot, grated carrots, diced tomatoes, diced peppers & boiled corns.
Spread the Humus dressings to the salad.
