Hello everyone!

I hope today find’s you well and feeling vibrant! This weeks video is a super healthy and easy to make pesto sauce! It’s low in calories because it’s not loaded with unhealthy oil and cheese. This pesto is light and can be used as a condiment as well. It can not only work on any pasta but it would be great on steamed/baked potatoes. I even added it on my homemade veggie burgers! YUM!

ARUGULA & SPINACH PESTO SAUCE

– 3 cups of mixed Arugula & Spinach Mix
– Juice of 1 Lemon
– 5 cloves of Garlic
– 1 Tbsp. Nutritional Yeast
– 1/2 cup Pumpkin Seeds
– 1 cup Tomatoes
– 5 cups Pasta of choice

1. Cook Pasta according to package directions. Drain and set aside.

2. Add all the ingredients into a food processor and pulse until nice and smooth.

3. In a large bowl add the cooked pasta and dress it with the pesto sauce. You can sprinkle some nutritional yeast on top of each serving if desired.
