Puri bhaji is the simplest and tastiest breakfast recipe which is prepared in South Indian style and is ready within 10 minutes. First knead the dough for poori. Keep the dough aside. Then make the potato curry. Boil the potatoes in advance to make instant sabji. Then fry the pooris.
Some tips for making crispy and fluffy pooris:
1. While kneading the dough for puri, add semolina/rava.
2. The dough for puri should not be too tight like mathri or too soft like chapati.
3. Fry pooris in hot oil.
4. Press the edges of puri slightly to make it fluffy.
