Ingredients
– 4 boiled peeled potatoes
– ½-inch ginger grated
– 1 green chilli (slit)
– fresh coriander leaves
– ½ teaspoon saunf (fennel seeds)
– ¼ teaspoon kalonji (nigella seeds)
– ½ teaspoon methidana (fenugreek seeds),
– ½ teaspoon cumin seeds
– ¼ tspn turmeric powder
– 1 tspn coriander seeds powder
– Little hing (asafoetida)
– Little mustard seeds
– Little rai powder
– Little Kashmiri chilli
– Little Red chilli
– Little chaat masala
– Salt to taste
– ¼ tspn garam masala
– 4-5 tablespoons of mustard oil
Preparation
1.
Take 4 potatoes, boil and peel them
2.
Heat 4-5 tablespoons of mustard oil in a pan. Wait till the colour of oil changes

In the meantime, Cut the boiled potatoes into large pieces and keep aside

After the oil has been heated up, add mustard seeds, generous pinch of hing (asafoetida), saunf (fennel seeds), kalonji (nigella seeds), methidana (fenugreek seeds), cumin seeds, ginger, green chilli to the heated oil

Also, add little Kashmiri red chilli powder, little red chilli powder, salt to taste, ¼ tspn turmeric powder, 1 tspn coriander seeds powder, little chaat masala & little amount of rai powder
6.
Roast these spices on low flame. After spices have been roasted, add chopped potato pieces to the tempering. Roast for 4-5 mins.
7.
After 4-5 minutes potatoes are roasted. Add coriander leaves and mix well. Add ¼ spice spoon garam masala. Switch off the gas stove.
8.
Achaari Aloo is ready. Serve Achaari Aloo with roti, paratha or rice
