Quinoa is very high protein with all the essential amino acids. It is gluten free and has a low glycemic index, which is good for blood sugar control. This protein packed Quinoa salad is full of flavor and great as a main dish or side dish.

INGREDIENTS
Three- Bean Quinoa Salad
1 cup tricolor quinoa
2 cups water
1 cup kidney beans
1 cup garbanzo / chickpea
1 cup white beans
2 tomatoes diced
3 cups of greens ( romaine, spinach, arugula)
1/2 cilantro/ coriander chopped

DRESSING
1/4 cup cilantro/ coriander
1 tomato
1/4 cup chopped onion
Juice of 1 lime
2 cloves of garlic
1/4 teaspoon of dried oregano/Italian seasoning
1/2 teaspoon salt
1/4 teaspoon ground white / black pepper
1/2 teaspoon ground cumin
1/4 teaspoon paprika
2 1/2 tablespoon olive oil

TOPPING
1 avocado, cubed
