Hi everyone! I hope everyone is doing well and staying healthy. Have a fantastic week ahead!

Today’s video is a simple work lunch meal prep and I will walk you through what I take with me to work to eat. I have to plan ahead and always have enough healthy food options because I work long hours at the hospital. Trust me when I tell you that the hospital sadly doesn’t have very many healthy options available to me. Being prepared is the best thing I can do in order to stay healthy and feel great.

ROASTED PUMPKIN SPICE SWEET POTATOES

– 2 Large Sweet Potatoes, peeled and chopped up
– 1 Tbsp. Organic Cinnamon
– 1 Tsp. Pumpkin Spice
– Drizzle of Pure Maple Syrup (Optional)

– Add the sweet potatoes to a baking dish. Add the Cinnamon, Pumpkin Spice and maple syrup. Combine well.

– Bake at 400F for 30 minutes covered.

AIR FRIED TOFU

– 1 Package of Tofu, drain and press water out.
Chop up the tofu and place on a plate or bowl.
– Add 1 TBSP. of garlic powder and drizzle Tamari on top of the tofu. Flip and season both sides.
– Add to the air fryer and bake for 10 minues at 350F. Flip and cook for 5 more minutes.

GARLIC BROCCOLI

– 500g frozen broccoli
– 1 Tbsp. Garlic Powder
– 1 Tbsp. water or broth

Add the broccoli to a pan with water and garlic powder. Cook with the lid on for a few minutes at a medium heat.
