2 heads of broccoli, 1 red onion, 2 TBSP Mediterranean spice blend, 4 thinly sliced chicken breast, 1 lemon, scallions, 2 roma tomatoes, 2 cloves garlic, 8 oz greek yogurt, 1 TBSP honey, 1 TBSP yogurt seasoning, 12oz orzo pasta

Mediterranean Spice Blend: 1.5 tbsp rosemary, 1 tbsp cumin, 1 tbsp coriander, 1/2 tbsp oregano, 1 tsp cinnamon, 1/2 tsp salt

Yogurt seasoning blend: 1/2 tbsp oregano, 1/2 tbsp thyme, 1/2 tbsp marjoram, 1 tsp sesame seeds

1. Wash and dry all produce. Adjust racks to middle and upper positions and preheat oven to 450 degrees. Bring a large pot of salted water to a boil. Cut Broccoli into bite sized pieces. Halve and peel onion, then cut into ½-inch-thick wedges.
2. Toss broccoli and onion on a baking sheet with a drizzle of oil, 1 tbsp of the Mediterranean spice blend, and a large pinch of salt and pepper. Rub chicken all over with remaining Mediterranean spice blend.
3. Roast veggies on middle rack until veggies are tender, 25-30 minutes. Meanwhile, zest 1½ tsp zest from lemon, then cut into wedges. Trim, then thinly slice scallions, separating greens and whites. Core and finely chop tomato. Mince garlic.
4. In a small bowl, stir together yogurt, lemon zest, juice from lemon wedge, 1 tbsp honey (1 packet), and a pinch of yogurt seasoning. Season with salt and pepper. Set aside. Once water boils, add orzo to pot. Cook, stirring occasionally, until al dente, about 9 minutes. Reserve ½ cup pasta cooking water, then drain. Keep orzo in strainer and return empty pot to stove.
5. Heat a large non stick pan to medium-high heat. Add thinly sliced chicken breast to pan once hot. Cook each side for 4-5 minutes.
6. Add scallion whites and garlic to the pot the orzo was in. Cook, tossing often, until softened, 2-3 minutes. Add tomatoes and cook, tossing, about 1 minute. Return orzo to pot along with ¼ cup pasta cooking water. Stir to combine. Remove pot from heat.
7. Divide orzo, chicken, and veggies between plates. Garnish with scallion greens. Serve with yogurt sauce and any extra lemon on the side for drizzling.
