Avocado Toasts
Ingredients:
Avocado – 2
Onion chopped- 1/2 cup
Green chilli chopped- 2
Lemon juice – 1 tbsp
Eggs – 3
Spinach
Cherry tomatoes – 5
Chilli flakes
Spring onions chopped
Olive oil – 2 tsp
Mayonnaise

Toast bread slices:
1. Heat a pan, place bread slices.
2. Toast both sides until golden brown.
You can do this using a toaster.

To make Avocado Spread:
1. Cut avocado in half and remove the pit.
2. Scoop out the flesh into a bowl.
3. Mash the avocado using a fork to your desired consistency.
4. Then add chopped onion, green chilies, salt and lemon juice. You can add chili flakes for extra heat.

To make the different toppings:
1. Fried egg – heat a pan, drizzle some oil and crack an egg into it. Sprinkle some salt chilli flakes and chopped spring onions. Fry until whites are set.
2. Boiled egg – bring a pot of water to rolling boil. Add little salt and reduce flame to medium low. Then add an egg and cook for 6-7 minutes to get a medium boiled egg. Then transfer the egg to ice cold water for 2-3 minutes. Peel and cut the boiled egg into wedges.
3. Poached egg – Crack an egg into a small bowl. Bring a pot of water to boil, then reduce heat to lowest. Add 1 tbsp of vinegar to it. Then stir to create a vortex. Then pour the into the middle of vortex slowly. Let it cook for 3 minutes, then remove it to a paper towel to drain excess water.

Making avocado toasts:
#1 – Top the toasted white bread with the avocado spread and then the fried egg.
#2 – Top the toasted whole grain bread with the avocado spread, spinach leaves and cherry tomatoes cut in halves. Then sprinkle some salt, chilli flakes and drizzle olive oil on top of it.
#3 – Top the toasted whole grain bread with the avocado spread and boiled egg wedges. Then sprinkle some salt, chilli flakes and add Olive oil mayonnaise.
#4 – Top the toasted bread with the Avocado spread. Then add some spinach leaves and then the poached egg. You can sprinkle some salt and chilli flakes on it.
