Hello again! We are cooking dinner together and its an easy and healthy dinner for you and your family to love! If you’re looking to eat more vegetables but don’t know any ideas how to incorporate veggies into your diet and still make the food taste good, then this dish is for you! This easy dinner is filled with vegetables and its healthy for everyone!

Ingredients:

6 garlic cloves
1 medium onion
6 celery sticks
3 carrots
3-4 yukon gold potatoes
2 medium broccoli
4 cans of coconut milk ( I recommend getting the full coconut milk, not the light one, and also make sure its unsweetened)
salt and pepper
1 1/2 tbl cumin
1 tbl curry powder
1/2 tbl tumeric
1 tbl corriander
1-2 cups of low sodium vegetable broth
