Preparation
Take the soya chunk pieces with 200 ml of water. Add salt and cook for 5 minutes. Cool and squeeze out the extra water . Heat the pan and pour in 10 ml of oil. Put in the onion pieces ,ginger and garlic and saute till the onion pieces are a golden brown. Add the pieces of a peeled potato and the cooked soya chunk pieces and saute well. Add salt to taste, a spoon of mixture of spices and the pieces of a tomato and mix well. Add 100 ml of water and mix and cook for 10 minutes and take off the flame and use this mixture for the Soya Chunk potato filling. Take one cup of all purpose flour and add salt to taste. Add 10 ml of oil. Mix well. Add 3/4 cup of water little by little and mix well and knead to make a dough. Make the dough into smaller balls. Flatten the dough using a roller pin into thin circular shape. Cut this circular shape in two. Put a little Soy chunk potato filling in the center of each semi circle. Fold into a triangular shape and seal the edges and bottom by folding and keep aside. Heat 75 ml of oil in a pan and fry the resulting raw empanadas in medium flame until they become a golden color.Take off the flame and serve
