Butternut Squash Soup

Serves: 8
Prep Time: 20 minutes
Cook Time: 60 minutes
Ingredients
Butternut Squash, 1-½ cup (360g / 12.7 oz)
Carrots, 1 cup, sliced (122g / 4.3 oz)
Zucchini, Cooked From Fresh, 1 cup (180g / 6.35 oz)
Celery, 1 cup (101g / 3.56 oz)
Leeks, Raw, 1 cup (89g / 3.14 oz)
Chicken Broth, Bouillon or, Consommé,
Homemade, 2 liter (2029g / 71.57 oz)
Extra Virgin Olive Oil, 2 tablespoon (27g / 0.95 oz)
Salt, ¼ teaspoon (2g / 0.07 oz)
Pepper Black, 1 dash
Butter, 1 tablespoon (14g / 0.49 oz)
Garlic, 1 teaspoon (3g / 0.11 oz)
Cajun Spice Seasoning, 1 tsp
Nutmeg, ¼ teaspoon
Cinnamon, ½ teaspoon
Basil, Dried, 1 teaspoon
Maple Extract, 1 tsp
Whipping Cream, Not Whipped, ¼ cup (60g / 2.12 oz)

Instructions
1. Preheat oven to 400F.
2. Half butternut squash. Place on baking tray with skin side up.
3. Peel, wash, and chop carrots. Wash and chop zucchini, celery & leek. Spread all vegetables over baking tray.
4. Drizzle olive oil over vegetables and season with salt & pepper.
5. Bake 40 minutes until vegetables begin to brown and are tender.
6. Carefully remove peel from squash.
7. On medium high heat, melt butter and sauté garlic 2-3 minutes. Add Chicken stock and all vegetables.
8. Bring to boil and add seasoning. Simmer 10 minutes and season with salt & pepper.
9. Use stick blender to purée until smooth. Add a little water if too thick.
10. Add whipping cream and serve.
