Ingredients for Potato stuffing:

1) 1 tbsp cooking oil
2) 1 tsp crushed ginger
3) 1 tsp finely chopped chili
4) 1/4 cup chopped onion
5) 1 cup roughly chopped spinach
6) 3-4 boiled potato
7) Salt to taste
8) 1 tsp red chili powder
9) 1 tsp turmeric powder
10) 1 tsp garam masala
11) 1 tbsp anardana
12) tsp kasuri methi

Process for stuffing:

1) Heat oil in a pan, add ginger and green chili. Once fried add in chopped onion and cook till translucent.
2) Add in spinach, followed by boiled potatoes. Sprinkle salt, red chili powder, turmeric powder and give it a mix.
3) Use a masher to mash the potatoes, add in garam masala, anardana and kasuri methi.
4) Cook for few minutes and let it cool completely.

Ingredients for Gram flour Coating:

1) 2 cup gram flour/besan
2) 1 tsp turmeric powder
3) 1 tsp carom seed
4) 1/2 – 1 tsp salt
5) pinch of baking soda
6) 1 tbsp hot oil
7) Water as required

Process for coating:

1) Add all the dry ingredients and mix everything.
2) Add in hot oil and slowly add small amount of water.
3) Use a whisk to make the batter, make sure the batter is not very thick or thin.

Ingredients for bread pakodas:

1) 6 Rye bread or brown bread
2) Coriander chutney
3) Khajoor/dates chutney
4) Oil to brush the pan

Process to make the bread pakodas:

1) Slice all the bread slices in half.
2) Apply coriander chutney on one side and sweet chutney on one.
3) Stuff the potato masala in between the bread and press lightly.
4) Brush the oil in a non-stick pan and let it heat for few seconds.
5) Coat the bread slices with the gram flour coat, and cook the pakodas in the pan.
6) Cook on medium heat for few minutes from all sides.
7) Sprinkle some chat masala and serve hot with chutney.

Note: you can shallow fry for more crisp texture or deep fry if you want.
