A Buddha bowl is my go-to meal on workdays if I’m WFH. I like to mix and match different ingredients to keep it interesting and nutritious. More often than not, I have black beans (Mexican style) along with baked sweet potatoes with leftover rice. It’s almost unbelievable how you could whip up a delicious and healthy meal that’s easy to make, too. Hope you guys enjoyed watching this video as much as I enjoyed eating this dish. 😉
