POWER PACKED SALAD
Ingredients:-
1 cup boiled quinoa
½ cup grated carrot
10-15 cherry tomatoes, halved/ 1 big tomato
½ medium green capsicum (optional)
¼ large red capsicum ( optional)
¼ large yellow capsicum ( optional)
15-20 blanched broccoli florets
1 ripe avocado
50 gms cottage cheese (paneer)
½ onion slices
2 tbsp toasted sesame seeds
2 tbsp toasted flax seeds
Salt as per taste
15-20 fresh baby spinach leaves
Dressing For Salad-
2 tbsps extra virgin olive oil
Juice of ½ lemon
1 tbsp Chopped garlic
¼ tsp black pepper powder
½ tsp red chili flakes
1 tbsp honey
Method
1. In a large mixing bowl, put quinoa, grated carrot, and cherry tomatoes.
2. Cut all the colored capsicums into small pieces and cut avocado and add. Add broccoli florets.
3. Break cottage cheese into small pieces and add.
4. Add spinach leaves.
Dressing for Salad-
1. Take a small jar and add extra virgin olive oil, and juice of ½ lemon, chopped garlic, red chili flakes, and honey.
2. Shake it well.
3. Now open the lid and pour the dressing on top of the salad.
4. Now add sesame seeds and flax seeds & salt per taste.
5. Now take 2 spoons and combine it well.
6. Transfer into a serving bowl and serve immediately.
