Bored of same idly, dosa everyday? Try this low calorie vegetable lasagna and amaze your family🥳. It tasted so delicious with goodness of veggies, spinach & Paneer. Take a look on the recipe & I’m sure you ll fall in love with it! 😍
Ingredients: serves 2
Red Sauce :
* 6 Roma/sweet variety Tomatoes
* 2 tsp Extra virgin Olive oil
* 1 medium Onion, chopped
* 1/2 tsp Black pepper powder
* 1 tbsp Garlic, chopped
* 1/2 tsp Oregano
* 1/2 tsp Basil
* 1/2 tsp Mixed Italian seasonings
* Salt needed
* Red chilli flakes as needed.
White Sauce:
* 1 tbsp Butter
* 1.5 tbsp Flour
* 1.5 cup Milk
* 1/2 tsp Oregano
* 1/2 tsp Basil
* 1/2 tsp Mixed Italian seasonings
* Salt needed
* Red chilli flakes as needed.
Tossed Veggies:
* 2 tsp Extra virgin Olive oil
* 1 tbsp Garlic, chopped
* 1/2 Zucchini
* 1/2 Red Bellpepper
* 1/2 Green bell pepper/Capsicum
* 1 handful Spinach
* 1/2 tsp Black pepper powder
* 1 tbsp Garlic, chopped
* 1/2 tsp Oregano
* 1/2 tsp Basil
* 1/2 tsp Mixed Italian seasonings
* Salt needed
* Red chilli flakes as needed.
Other ingredients:
* 200 gms Paneer, crumbled
* Lasagna sheets ready to bake
* Spinach leaves to garnish
Bake time: 400F for 25 mins with aluminium foil & 5 mins without Aluminium foil.
Notes:
+ You can opt for low fat Milk & Low fat Paneer for skinny vegetable lasagna or low calorie vegetable lasagna
+ I prepared for 2 so used a loaf pan. You can double the recipe if needed & use a square pan for baking. Baking time stays same.
+ You can broil at high for a minute to brown the cheese. I wanted to cut the fat, so used only one stick cheese.
+ You can still add vegetables like broccoli or carrots along with it & adjust the seasonings. It still tastes good.
+ You can use store bought sauces or Tomato paste instead of making your own too.
+ I used Ready to bake lasagna so did not boil it. Prepare the lasagna sheets as mentioned in the package & follow the same recipe.
+ I used White sauce & Paneer instead of Cheese. You can use cheese instead of paneer as preferred . Though it is low in calorie it is so satisfying. Try it for yourself! 😊
