Ingredients
* 1 scoop vanilla protein powder (about 30–35g)
* 50g nonfat Greek yogurt
* 45 mL unsweetened almond milk (3 tbsp)
* ¾ tsp baking powder
* ½ tsp cinnamon
* Pinch of salt
* ¼ tsp vanilla extract
Cinnamon Swirl
* 1 tsp honey
* ½ tsp cinnamon
Instructions
1. In a microwave-safe mug, combine:
* Protein powder
* Greek yogurt
* Almond milk
* Baking powder
* Cinnamon
* Salt
* Vanilla
2. Stir just until smooth. Don’t overmix.
3. In a small bowl, mix together:
* 1 tsp honey
* ½ tsp cinnamon
4. Drizzle the honey mixture over the top of the batter. Lightly swirl it with a toothpick or knife.
5. Microwave for 45–60 seconds. Start with 45 seconds and add 5–10 second intervals if needed. The center should be just set.
