1 Piece Wild Salmon
1 Piece Lime
2-inch Lemongrass Finely Cut
1 stalk Scallions Finely Cut
Coriander Finely Cut
3 Garlic Cloves Finely Cut
2 Pieces Baby Tomatoes (cut into halves)
1 Piece Small Fresh Red Chili Finely Cut (deseed if you like less spicy)
1 Piece Small Fresh Green Chili Finely Cut (deseed if you like less spicy)
-Prep.
In A Mortar & Pestle, Add
Garlic, Coriander, Chilies, And Pound To Release Flavor.
Pound Until Ingredients Are Just Nicely Crushed
Roll And Massage Lime Then Cut Into Halves
How I Cooked Salmon Lime For Dinner;
A. In A Clean Fry Pan, Place Salmon Skin Down
Add 1 tsp Olive Oil
Do Not Flip Until After 1 minute Or So (Or check If Skin Is Crisped)
Flip And Cook Until Outer Part Is Golden Brown, Not Fully Cooked
Transfer To Plate… Keep Aside
B. In A Clean Fry Pan
2 tsp Olive Oil
Add-In Pounded Mixture
Add Finely Cut Lemongrass
Squeeze Half Lime Juice Into Pan
Let Ingredients Infuse And Soak
Transfer To Plate
In A Wok Or Steamer, Add
1 Cup Water
Place Steam Rack
Place The Semi-Cooked Salmon (A above)
Place Half-Cut Baby Tomatoes
Add-In Cooked Ingredients (B above)
Add Veg. Broth (Mixed With With A Dash Of Brown Sugar And Squeeze Half Lime Juice)
Steam For 1 minute
