If you’d like to keep this Mushroom Cheese Sandwich Recipe healthy, you can substitute the butter for oil. In fact, you can even cook the bread without any oil, but that can result in overly hard toast. I would recommend using either butter or oil for the best results. Considering the inside of the sandwich is super healthy, butter is my preferred option.

2 Bread Slices
Cheddar Cheese (or mozzarella) – 1/2 cup
Mushrooms – 100g, thinly sliced
Garlic – 1 clove, finely chopped
1 Small Onion, finely chopped
1 Green Chilli, finely chopped (optional)
Salt – 1/2 tsp, or as per taste
Black Pepper – 1/2 tsp
Oil – 2 tsp
Tomato Ketchup – 2 tsp
Coriander stems (or leaves) – 3 tsp
Lemon Juice – 1 tsp
Butter – 2 tsp
