An easy, delicious kūmara salad. We love the refreshing combination of orange, kūmara and watercress.

Ingredients (serves 2)

Salad
• 2 cups diced, cooked kūmara
• 1 orange, peeled and chopped
• 2 cups watercress leaves

Dressing

• 2 tbsp mayonnaise
• 2 tbsp plain yoghurt
• 1 tbsp lemon juice
• 1 tbsp chopped fresh mint
• 1 tsp lemon zest
• 1/2 clove garlic, crushed (optional)

Method:

• In a large bowl mix together the kūmara, orange and watercress
• In a separate bowl mix together all the dressing ingredients
• Add the dressing to the salad and mix gently through
