Bbq Italian Chicken
*24 oz chicken breasts (boneless)
*3/4 cup bbq sauce
*1/4 cup reduced fat italian dressing
*2 tbsp. brown sugar
*1 tbsp. worcestershire sauce
*2 tbsp. cornstarch
* 2tbsp. chicken broth (or water)
*Put chicken in slow cooker. Combine bbq sauce, dressing, brown sugar, and worcestershire sauce. Pour over the chicken and cook on low for 5 hours.
*Remove chicken to cutting board and shred it. In a bowl mix together cornstarch and chicken broth. Mix the sauce into the slow cooker and add chicken back into it. Cook for 45 minutes longer. Serve on buns, rice, potatoes or anything you prefer.
Bbq Chicken Quesadillas
*1/4 cup onion
*4cups spinach
*salt and pepper
*1 cup drained kidney beans (or black or whatever preference)
*3/4 cup corn
*1 cup leftover bbq chicken
*8 taco size whole wheat tortillas
*8 tbsp. shredded cheese
*(optional 1 tbsp. jalapeno)
*Saute onion and spinach in sauce pan for 5-7 minutes. Season with salt/pepper. Cook until wilted and onion tender.
*In a bowl mash beans with a fork. Add spinach mixture, corn, (jalapeno), and chicken. Spread 1/2 cup filling over half of tortilla and top with cheese. Fold tortilla over and repeat with the remaining ones.
*Warm a skillet (with cooking spray or some oil in pan) over medium heat and cook quesadillas until brown and heated through. (about 4 minutes each side)
