In this video I’m sharing my recipe for curried chickpea salad recipe. This curried chickpea salad is super easy to make, healthy and is a great dish to make in meal prep as it stores well in the fridge. This dish is gluten free and dairy free.

This curried chickpea salad can be served on a bed of salad greens, as a sandwich filling or in a baked potato . If you want to make this dish vegan I recommend using a vegan mayonnaise alternative or omit the mayonnaise and use more dairy free yoghurt.

*Curried Chickpea Salad*

Ingredients
-1 stick of celery, cleaned & sliced or diced
-1 400g tin of chickpeas, drained & rinsed (or use 240g cooked chickpeas)
-1/4 cup plain dairy free yoghurt
-2 Tbsp. mayonnaise or vegan alternative
-3 Tbsp. mango chutney
-3 Tbsp. flaked almonds
-2 tsp. curry powder
-2 heaped Tbsp. dried fruit such as sultanas, raisins or chopped dried apricots
-salt & pepper to taste

How to make
Place all ingredients in a bowl and mix well.

Store in an airtight container in the refrigerator.
