Here is a super quick healthy Kidney Beans Salad Recipe that is put together with a brilliant Honey Mustard Salad Dressing.

RECIPE:

Ingredients For the Dressing:
. 2 Tbsp Mustard
. 2 Tbsp Lime Juice
. 2 Tbsp Vinegar
. 2 Cloves Garlic
. Salt to Taste
. 1 Tsp Crushed Black Pepper
. 1/4 Cup Olive Oil
. 1/4 Cup Honey

Ingredients for the Salad:
. 1 Cup Cooked Kidney Beans ( Rajma)
. 1/2 Cup Corn
. 1/2 Cup Sliced Green Capsicum
. 1/2 Cup Sliced Red Capsicum
. 1/2 Cup Sliced Yellow Capsicum
. 1/2 Cup Sliced Onion
. 1/4 Cup Chopped Spring Onions
. 1/2 Cup deseeded and Sliced Tomatoes

Method:
In a Blender Jar Add the Mustard, Lime Juice, Vinegar, Garlic, Salt, Black Pepper, Olive Oil and Honey and Blend using a hand blender. The dressing for the salad is ready.

Now, in a Mixing Bowl add the Kidney Beans, Corn, Green Capsicum, Red Capsicum, Yellow Capsicum, Onion, Spring Onions and Tomatoes.

Add the dressing you just prepared into the salad and mix gently.

Note: You can boil the corn before adding it into the salad if you prefer it boiled.
