I’m sharing 3 easy and healthy crockpot recipes! I’m always on the lookout for easy weeknight meals to try, especially if they’re made in the slow cooker! All of these recipes turned out great and we’ll be making them again. Plus, the vegetable soup can be made vegan and is a plant-based recipe. It’s jam-packed with vegetables and great for a cold day! And, the chicken and broccoli recipe is low carb and can be made keto (by replacing the cornstarch with xanthan gum, arrowroot or another low carb thickener – and also eliminating the honey). Enjoy!

Vegetable Soup:
(* I modified this by making it in the crockpot. I left out the tomatoes and added 1 teaspoon of Italian seasoning)
Swiss Steak:
(* This is very tomato-ey! I’d recommend mixing together 2 tablespoons of cornstarch, 2 tablespoons of water and 3 tablespoons of brown sugar – add this to the crockpot to tone down the tomato flavor. Or instead of the tomato sauce, use 1 can condensed tomato soup and 1/2 cup water)
