Hi friends, today I am sharing with you one of my favorite healthy breakfast ideas, It is vegetable cutlet , very healthy and nutritious recipe, and in single cutlet will get nearly 48 calories, protein 1.95 g, fiber 2.63 these vegetable cutlets are very healthy and easy to prepare recipe. it can be categorized as low calorie foods.
This recipe is one of the healthy dinner ideas and tasty too
We can add these recipes in our weight loss diet plan during dinner time, or as weight loss snacks. This dinner recipe is gluten free so those who have gluten sensitivity they can also have this recipe. Those who have Pcod/Pcos, thyroid, diabetes, and high cholesterol issues. They can also add this recipe in their weight loss diet plan.This is also a vegan recipe because no animal-based fats or proteins are used while making this recipe

Serving-10
Ingredients for making of Veg Cutlet
Whole chickpeas (Bengal gram) – 80 gm
Rice flakes (1 cup) – 30 gm
Onion (medium) – 60 gm
Garlic cloves (big) – 3 nos (5 gm)
Carrot – 50 gm
Capsicum (medium) – 40 gm
Green chilli – 3 gm as per taste
Groundnuts oil – 10 gm
Coriander leaves (1/4 cup) – 10 gm
Coriander powder – 1 spoon
Turmeric
Red chilli powder and Salt as per taste
(Note – this is a vegan food, you can prepare this recipe in butter or any other animal-based fats)

Cooking Method of this vegan recipe of cutlet
Wash whole chickpeas (Bengal gram), soak for 10 hours and then cover it in a wet cloth for 24 hrs to make its sprouts.
Wash and chop the veggies into small pieces.
Wash sprouted chickpeas and make a coarse paste in a mixer grinder without adding any water.
Take the chickpeas paste into a plate, add all the chopped vegetables
Rice flakes (1 cup) wash it and add it to the plate. If you are using thick rice flakes then wash, cover & Soak for 10 minutes in air. Thin rice flakes don’t need 10 mins of soaking after washing.
Add coriander leaves, turmeric, coriander seeds powder and salt as per taste.
Then mix all the ingredients together and mold them into a cutlet shape of your choice.
Divide this dough into 10 equal parts and make cutlet mold. These cutlets may be stored for 2 days if refrigerated and may be used as evening snack too in addition to healthy diner as gluten free recipe.
Heat the pan and grease it with little oil. Bake the cutlet on both sides up to 5 to 8 minutes on low – medium flame. Serve hot.
