How to make Panki at Home (Quick Breakfast Recipe)

Corn Paneer Panki is a healthy snack recipe native to Gujarat.

In this healthy recipe, the batter is made of besan along with a medley of Indian spices and is cooked by spreading the batter between the banana leaf.
The paneer and corn mixture adds to the nutrition quotient of the recipe.

Corn is rich is in Vitamin B12, folic acid and iron which helps in the production of red blood cells in the body.
Paneer is high in protein which is a must for good muscle development.

Chickpea and Oats Crackers

Ingredients
1 cup grated sweet corn kernels
1/4 cup crumbled fresh paneer
2 tbsp finely chopped coriander
2 tsp Oil
1/2 tsp salt
1 tbsp green chilies, chopped
2 tbsp semolina
1/4 cup besan
16 leaves banana (each of 5” roundels)
1 tsp Oil

Method
Combine all the ingredients along with 2 tbsp of water in a deep bowl and mix well.
Apply a little oil on one side of each banana leaf and keep aside.
Place a banana leaf with the greased side facing upwards, pour 2 tbsp of the batter over it and spread it evenly.
Place another greased banana leaf with the greased side facing downwards over it and press it lightly.
Cook on a non-stick griddle till light brown spots appear on both the sides of the leaf and the panki in between peels off the leaf easily.
Repeat the steps to make more 11 pankis.
Serve hot with green chutney.
