Tex Mex Chicken
– 1 sweet potato
– 1/2 sweet corn
– baby spinach leaves
– 1/2 capsicum
– 1/2 sachet Tex-Mex spice blend
– chicken tenderloins
– 1/2 red onion
– 1/4 lime
– garlic sauce
Preheat oven to 220°C/200°C fan-forced. Roast C sweet potato, capsicum & red onion for 25-30 minutes (coat with some oil, salt & pepper)
Drain the sweetcorn. In a bowl, combine the chicken tenderloins, Tex-Mex spice blend and a pinch of salt and pepper. Drizzle with olive oil and toss to coat.
Heat a large frying pan over a high heat. Add the sweetcorn and cook for 4-5 minutes. Transfer to a large bowl. In a small bowl, combine the garlic sauce and a squeeze of lime juice. Season to taste.
Cook the chicken until cooked through, 3-4 minutes with the spice blend.
Add the roasted veggies, baby spinach leaves to the corn. Drizzle with olive oil, season to taste and toss to coat.
Slice the Tex-Mex chicken. Divide the veggie toss between plates and top with the chicken. Spoon over the garlic-lime sauce. Serve with any remaining lime wedges.
