Today’s video is about easy and simple Chicken Biryani. Biryani is a mixed rice dish originating among the Muslims of the Indian subcontinent. It is very easy to cook at home with basic ingredients and it is finger licking tasty. On this channel, we don’t compromise on health or taste, we give you the best of both worlds. INGREDIENTS:
Biryani:
STEP 1: PREPARE MASALA WITH BONES
– 1kg /2lbs Chicken with bones
– 2 tbsp Oil
– 4 large Onions
– 2 tbsp Ginger-Garlic (Adrak-Lehsan)
– 2 large Tomatoes
– 10-12 tbsp Green chilies
– 4 tbsp Homemade Biryani Masala (recipe below)
– 1 cup blended low fat Yogurt (Dahi)
STEP 2: BOIL THE RICE
– 500 g uncooked rice – Soaked in water for at least 1 hour
– Water 3 times of rice
– 1 tbsp Salt
STEP 3: ASSEMBLING
– Layer of masala
– layer of boiled rice
– 1 cup Cilantro leaves (Dhania)
– 1 tsp Saffron (Zafran) —optional
– 4 tbsp hot low fat milk —-optional
– 1 tbsp Ghee
Home made Biryani Masala Mix :
Grind the following ingredients finely:
– 3 tbsp Coriander seeds (Sabat Dhania)
– 1 tbsp Black Cumin seeds (Shahi Zeera / Jeera)
– 1 tbsp Fennel seeds (Sonf)
– 5 Bay leaves (Tez patta)
– 8 Green cardamom (Hari ilaichi)
– 5 Cinnamon sticks (Darchini / Dalcini)
– 1 tsp Black peppercorns (Kali mirch)
– 1 tsp Cloves (Laung)
– 1 Red chili (Lal mirch) – Optional
– 1 Star anise (Badian / Chakra phool)
– 4 Black cardamom (Kali ilaichi)
– 1 tbsp Thymol seeds (Ajwain)
– 1 tsp Black seeds (kalonji)
– 1 tsp Fenugreek seeds (Methi dana)
– 1 tsp Pomegranate seeds (Anar dana)
Add the following in the ground masala:
– 1 tbsp Turmeric(Haldi)
– 4 tbsp Red chili powder (lal mirch powder)
– 1 tbsp kashmiri chili powder – not spicy
– 4 tbsp Salt
– 1 tbsp Ginger powder
– 1 tbsp Garlic powder
– 10 Green cardamom (Hari ilaichi)
– 7 Dried plum (Alu bukhara)
*You can use any kind yogurt but low fat yogurt is recommended.
*You can use mint leaves instead of coriander leaves.
*If you are using packet masala use double amount of masala.
*If you want to add extra spices in biryani you can add salt and red chili powder to taste.
*Soak the rice atleast an hour before boiling in water.
*For rice you can add salt during the boiling process as to taste.
*Try using basmati rice for biryani
