In today’s video I’m sharing three healthy vegan / vegetarian family dinner ideas using a dutch oven (aka one pot recipes). These are all super easy, quick and realistic meals that my family loves.

RECIPES AND PRODUCTS:
VEGGIE LOADED NOODLE SOUP
Serves 4
Ingredients:
5 cups vegetable stock (I use 1/2 vegetable stock, 1/2 water to keep soups low in sodium for my kids)
440g pre-cooked noodles OR 300g uncooked noodles of choice
2 medium zucchini, spiralled
2 carrots OR 1 capsicum (seeds removed), sliced thin
2 stalks celery (optional)
1.5 cups cooked and drained chickpeas (roughly 1 can)
1 clove garlic, crushed
1 onion, diced
1 tsp extra virgin olive oil

Instructions:
Place dutch oven on stovetop over medium heat.
Add oil, onion and garlic to base of pan and sauté for around 5 minutes until onion is translucent. Add a splash of stock as necessary to keep onion from browning.
Pour in remaining vegetable stock, vegetables and chickpeas.
Bring to boil and then reduce to a simmer. If using dry pasta, add before placing lid on dutch oven.
Allow soup to simmer for around 15 minutes covered or until noodles and vegetables are cooked. Remove lid.
If using pre-cooked noodles, add them now and simmer for a further 4-5 minutes. Remove from heat and allow to cool before serving.

➡️PICKY-EATER TIPS⬅️
Peel zucchini before spiralling (removes “green bits”)
Puree onion and garlic before cooking or omit onion.
If necessary, deconstruct soup by serving noodles, chickpeas and vegetables onto a plate and broth in a cup for extra picky eaters.
