Alright my lovely Tribers, it’s day 2 of my 5 day calorie tracking challenge! Today I answer this very common question when it comes to tracking….
“Should I weigh my food cooked or raw?”
And I thought what better way to answer this than by making a home cooked meal!

Sweet Chilli and Soy Beef Recipe
Time: 20 minutes
Servings: 4
Calories: Approximately 334 per serve (excludes served with rice or your choice of carbohydrate)
P:30.7g C: 19.4g F: 8.6g
Ingredients:
500g beef (we used sirloin cut into strips)
1 Green and 1 red capsicum, sliced
1 broccoli head, cut into florets and use the stalk
1 Red onion, sliced
1 handful of bean sprouts, approx 100gms
Salt and pepper, to taste
2 cups Basmati rice, to serve
Juice from 1 lime (reserved to squeeze over once cooked)
Sauce
4tbs sweet chilli sauce
4tbs soy sauce or tamari
1tbs garlic, minced
1tbs ginger, grated
Method:
1) Prepare sauce by mixing sweet chilli sauce, soy sauce, garlic and ginger and set aside.
2) Coat a large pan with olive oil spray and pan fry beef over medium heat, seasoning with salt and pepper.
3) Once browned, remove from pan and set aside.
4) Add onion, capsicum and broccoli to the pan and saute to steam.
5) Once veggies have softened, return beef to the pan.
6) Add pre-prepared dressing and bean sprouts and stir until well combined.
7) Remove pan from heat and squeeze the lime juice all over.
8) Serve with basmati or brown rice and devour it!
