Chaat Green Chutney Recipe:
Mint leave : 1 cup
Corrainder leaves : 1/2 cup
Green chilly : 2
Garlic pods : 2
Onion (Big) : 1/2
Chaat masala : 1 tsp
Salt : as required
Lime juice : 1 tsp
Add all the above ingredients to a mixer and blend well with no water or very little.
Hi it’s been a while since our kids attended school and finally we are just there. With schools re-opening for face to face after the year long remote classes kids and parents are all excited and getting ready. With all the enthusiasm and happiness of life getting back to normal slowly and kids back to school and less gadgets also comes the worry of getting back to routine with packing lunchboxes. So today I am going to share some quick and easy Tiffin box recipes that will help our daily morning rush hour before the kids pack off to school and hubbies to office.
I am sharing three varieties of healthy and tasty packed sandwich recipes which are not only healthy but extremely tasty and suitable for mix and match as per your taste, preference and availability of things. This constitutes for a wholesome tiffin/meal with all veggies and salads and fruits on whatever you choose. The Grilled Paneer Sandwich is a colorful and healthy filling sandwich. The simple and easy Grilled Potato Sandwich is a quick and filling no miss affair for kids and adults too. The Vegetable Mayonnaise (Veg- Mayo) Sandwich is a no miss deal for those sandwich lovers who are inclined to loaded club sandwiches. Ingredients :

Sandwich 1- Paneer Sandwich (0:57)

Paneer (grated) : 1 cup
Carrot (grated) : 1 /4 cup
Chopped green capsicum : 1/4 cup
Sweet Corn (boiled) : 1/4 cup
Chopped tomato(seedless): 2 tbsp
Chopped coriander leaves : 1 tbsp
Red chilly flakes : 1/2 tsp
Cumin seeds powder : 1/4 tsp
Kashmiri Chilly powder : 1 tsp
Chaat masala : 1/2 tsp
Salt : 1/4 tsp or as required

Sandwich 2- Potato Sandwich (3:37)

Boiled & Mashed potatoes : 2
Cumin seeds powder : 1/2 tsp
Kashmiri Chilly powder : 1 tsp
Chaat masala : 1 tsp
Salt : 1/4 tsp or as required

Sandwich 3- Veg Mayo Sandwich (5:07)

Carrot (grated) : 1 /4 cup
Sweet corn(Boiled) : 1/4 cup
Chopped Cabbage : 1/4 cup
Chopped Onion : 1/4 cup
Chopped Cucumber : 1/4 cup
Chopped coriander leaves : 1 tbsp
Vegetable Mayonnaise : 2 tbsp
Red chilly flakes : 1 tsp
Cumin seeds powder : 1/2 tsp
Kashmiri Chilly powder : 1 tsp
Chaat masala : 1/2 tsp
Garam Masala : 1/4 tsp
Salt : 1/4 tsp or as required

Other ingredients:
For Sandwich assembling
Bread (White) : 2 slices
Bread (Brown) : 2 slices(optional)
Green chaat chutney : 2 tbsp
Cheese slice : 1(optional)
Mayonnaise : 2 tbsp
Tomato Ketchup : 1 tbsp
Butter : as required

Tips:
All sandwiches:
• Adding the mint cilantro chutney gives an added flavour to the sandwich and balances the sweetness. You can use ketchup/Butter instead too.
• Using cheese slices are optional as per preference.
• I have shown both white and brown bread versions for variety. You can use as preferred.
• The chaat masala can be replaced with lime and pepper to get a continental taste.
• You can also use Amchur powder instead of chaat masala.
• Alter salt if using Chaat masala as most of the store bought ones have added salt in it.
• If no griller you can toast the bread slices on any tava/grill pan and press well when hot and then cut into desired shapes.
• The grill timing depends on the griller you are using.
• Appling butter on both sides of the griller gives the perfect grill finish to the bread.
• Best had hot and immediately after grilling for the yummy and tasty flavours with crispiness.
• No sauce or dips required for these sandwiches.

Paneer Sandwich :
• You can alter vegetables and quantity as per choice.
• The Paneer filling tends to be sweet due to the veggies and corn and hence have used chilly flakes. This filling is a non spice filling for kids .You can add pepper or spices of your choice.
• This filling quantity will serve about 10 – 12 Sandwiches.

Potato Sandwich:
• The potato filling needs to be thick consistency- no water/liquid.
• You can alter the chaat chutney with Butter/mayonnaise.
• If you want more spice for the sandwich you can quote the green chutney for both slices with a dash of mayo for the kids to enjoy the flavours.

Veg Mayo Sandwich:
• You can alter vegetables and quantity as per choice.
• For a cheesy and sweet sandwich can skip the Cilantro chutney (optional).
• You can alter the chaat chutney with mayonnaise as shown.
• You can also alter the cheese slice with Mozzarella cheese for the really cheesy sandwich.
