Ronit’s Daily Bread Recipe
(2 loaves)
Ingredients:
Tools:
-two 8.5 x 4.5 loaf pans
-stand mixer with a dough hook (optional)
-large bowl
-kitchen scale
Biga:
-200g brown einkorn flour
-2 pinches active dry yeast
-1 cup (225ml) warm water
Bread:
-400g emmer flour
-100g brown einkorn flour
-200g white einkorn flour
-1/4 tsp active dry yeast
-1 tbsp avocado oil
-1 1/2 tbsp maple syrup
-3 tsp salt
-1 1/2 cups (355ml) warm water
-sesame or topping of your choice (optional)
Instructions:
Make the biga:
1. Mix flour and yeast together in a large bowl.
2. Slowly add the water and stir to combine.
3. Cover with plastic wrap and let rise overnight.
The next day:
1. Combine the flours, yeast and salt in a large bowl (or the bowl of a standing mixer with a dough hook).
2. Add oil, maple syrup and water. Mix until just combined.
3. Add the biga and mix until all ingredients are combined. If using a stand mixer, make sure you are mixing on low speed and stop once the formed dough starts pulling itself from the edges of the bowl. If mixing by hand, wet your hands before you begin and mix for two to three minutes. You can also use a dough mixing spoon if you prefer.
NOTE: The dough will be very sticky and soft. Do not add additional flour. It will remain sticky until you bake it.
4. Cover the bowl and let rise in a warm place for 3-4 hours.
5. Lightly grease two loaf pans with a little bit of oil.
6. Divide your dough in two equal pieces and place one in each loaf pan.
7. If adding a topping (sesame), sprinkle it on top of the dough.
8. Cover the pans and let rise for another 40 minutes or until the doughs have doubled in size.
9. While the doughs rise, preheat your oven to 400°F.
10. Once the second rise is complete, take the temperature of the oven down to 385°F and place the loaf pans in the oven. Bake for 40 minutes. You will know the breads are ready if they sound hollow when you tap on them.
11. Carefully remove the breads from the pans onto a cooling rack and let cool completely before slicing.
