Here’s the second video in my Bulking Recipe series. I’m making my favorite vegan bulk lunch including black beans, roasted potatoes and guacamole. This plant based meal is incredibly high in nutritional values and it’s delicious. You can see what I eat in a day when I’m bulking on a healthy vegan diet.

Recipe:

2 Cups Black Beans
300g or 2-3 Medium Potatoes
1 Avocado
1 Cup Grape Tomatoes
1/2 Lime

Roast potatoes on 425 for 20-30 minutes or until crispy. Season with salt, pepper, paprika and red pepper.

Mash avocado, quartered grape tomatoes and lime juice.

Plate with black beans and enjoy!
